fix(ai): resolve pi-telemetry from source in workspace tests

The root and ./testing exports of pi-telemetry had no source
condition, so Durable's and pi-env's tests, which resolve with source,
failed to import it without a build: the Environments workflow has
failed on every run since 2026-10-18.
